Brasserie Margot at the Four Seasons Hotel Atlanta introduces Poulet & Bubbles, a weekly Tuesday dinner experience designed for two.
Inspired by the traditional French family meals of Chef de Cuisine Christophe Truchet’s childhood, the $76 sharing menu features a whole roasted chicken infused with rosemary, thyme, garlic, and onion, served alongside potato purée, Margot Salad, and an optional glass of Charles Heidsieck Brut Réserve Champagne for $10.
Bridging his French heritage with six years of Southern living, Chef Truchet also offers an unexpected savory-sweet peanut butter gravy alongside traditional chicken jus.
The offering is available every Tuesday during dinner service for $76 for two guests, with an optional add-on of Charles Heidsieck Brut Réserve Champagne for $10 per glass.
The menu components include a whole roasted chicken presented with rosemary, thyme, garlic, and onion before being carved, served with potato purée, Margot Salad, and a choice of traditional chicken jus or a signature Southern-inspired peanut butter gravy.
The concept stems directly from Chef Truchet’s upbringing on his parents' farm in France, where Sunday was marked by a family gathering around a centerpiece poulet rôti with potatoes grown by his father.
Bringing that sense of French brasserie generosity and conviviality to Atlanta, Chef Truchet added a unique local twist: a peanut butter gravy inspired by his time in the South and introduced to him by his North Florida-raised wife. This cross-cultural touch marries the traditional herbs of his French roots with a beloved Southern staple.
In addition to Poulet & Bubbles, Brasserie Margot features a diverse lineup of weekly and weekend culinary offerings, including Margot Girl Dinner on Thursdays—a localized take on the viral dining trend featuring Salade César, oysters, unlimited house fries, and a martini for $35 per person with an optional caviar add-on.
Weekdays feature an Express Lunch for $35 including one hors d’oeuvre, one entrée from Le Grill, and a selection of sorbet or ice cream. Saturdays and Sundays bring weekend brunch from 11:30 a.m. to 3 p.m. with French favorites, house-made pastries, and cocktails, while Afternoon Tea from 1 to 4 p.m. pairs pâtisserie and savory bites with custom-sourced JING teas and specialty coffees.
